Clementine Cake

Clementine cake is a simple cake made with almonds, eggs, clementines, peels, and all. It has a full rich citrus flavor. It’s a flourless dense and aromatic cake similar to a sponge cake. Including the peel increases the intensity of the flavor and bright color of the cake.

Honestly, this is one of the easiest cakes you will ever make. Place almonds in the bowl of a food processor, and pulse until it turns into almond flour. Mix the ground almonds with sugar and set aside. Throw the clementines in the food processor and pulse them into a citrusy paste. Add eggs, sugar, and vanilla, mix it all together and it’s ready to bake.

I added sliced almonds to the top of the cake right before baking and sprinkled the cake with confectioner sugar once it was cooled for a simple yet elegant look. You can also serve it with whipped cream or orange liqueur to add that extra wow.

  • 7 clementines
  • 8 eggs
  • 4 ⅓ cups ground almonds
  • 1 ½ cups granulated sugar
  • 2 teaspoons pure vanilla
  • ¾ teaspoon fine sea salt
  • 4 tablespoons slivered almonds
  • powdered sugar for dusting
  • softened butter for the cake pan


  • Heat the oven to 350°F. Lightly butter a deep 13×9″cake pan and line with parchment paper. Make sure the parchment paper covers both the bottom and sides of the pan.
  • Peel half the clementines. Leave the rest intact with the peel on. Cut the clementines in half and remove any seeds. Usually, clemetines are seedless, but it doesn’t hurt to be sure. Place the fruit in a food processor fitted with the blade attachment. Pulse for 45 seconds, or until smooth.
  • Add the eggs, ground almonds sugar, vanilla and salt. Process for another 15 seconds until a smooth batter forms.
  • Pour the batter into the cake pan and spread out evenly. Scatter the slivered almonds over the batter. Bake for 35 – 40 minutes, or until the cake feels firm to the touch.
  • Transfer to a wire rack and cool completely in the pan. Once the cake has cooled, use the parchment to carefully lift it from the pan onto a serving platter, dust with powdered sugar, then cut into slices and serve.
